Wheat flour 120 g

Eggs 4 pcs.

Sugar 60 g

Cocoa powder 10 g

Butter 30 g

Chocolate 32% 30 g

Cherry purée (frozen, sieved) 120 g

Vanilla bean 1 pcs.

Boiled cream 100 g

Cold cream 300 g

Crack the eggs into a bowl, add the sugar and mix with a whisk.
Add the salt, sifted flour and sifted cocoa, then mix to a smooth mass.
Add the milk and mix.
Melt the butter, add the chocolate and stir until the chocolate is completely melted.
Slowly pour the butter-chocolate mass into the batter and mix until fully combined.
Melt a little butter in a pan, pour in a portion of batter, spread thinly and fry the crêpes on both sides until coloured.

Heat the cherries with sugar and agar to at least 85°C.
Cool the mass so it is no longer too hot, to about 40–50°C.
Roll a tube from chocolate foil with a diameter of 2 cm. Seal the bottom of the tube with cling film and close tightly.
Pour a small amount of jelly into the tube and freeze it.
Then fill the tube to the top with the remaining jelly.
Chill until set.

Mix the gelatin with water and leave to swell.
Split the vanilla pod lengthwise and scrape out the seeds with a knife.
Pour the cream into a saucepan and heat, add the vanilla: both the seeds and the pod.
Add the Multi Cream White in portions, mixing until fully combined.
Add the pre-soaked gelatin.
Remove the vanilla bean from the mass. Blend.
Add the mascarpone and the cold cream. Blend again, then chill the cream.
Whip with a whisk to a fluffy cream.
Transfer the cream to a piping bag.

Arrange the crêpes in a row, slightly overlapping each other.
Pipe the cream in stripes every 3 cm, then spread with an offset spatula into an even layer.
Place the cherry jelly on the outermost crêpe, a few centimetres from the edge.
Roll the crêpes up into a log.
Trim the ends if necessary.
Wrap in cling film and chill for at least 12 hours in the fridge.
