Preparation method
Muffin batter
- In a saucepan heat the milk with butter and sugar until the ingredients dissolve.
- Add the 60% dark chocolate and stir until completely melted and smooth.
- Pour the mass into the bowl of a mixer, add the eggs and mix on medium speed.
- In a separate bowl combine the flour with baking powder and baking soda, then add to the chocolate mass.
- Mix until a smooth batter is obtained.
- Transfer the batter to a piping bag.
Baking the muffins
- Prepare a muffin tray and line it with paper cases.
- Pipe the batter to half the height of each paper case.
- Bake at 180°C for 25 minutes, until a skewer comes out dry.
- Remove from the oven and cool.
Cherry jam
- Heat the cherries with sugar and cornstarch until the fruit releases juice.
- Cook over low heat until a thick consistency is obtained.
- Cool before use.
Filling the muffins with jam
- In each cooled muffin carve a cavity using a melon baller.
- Fill the cavities with cherry jam.
Decoration cream
- Place the cream in a piping bag fitted with a decorative nozzle.
- Pipe rosettes on top of each muffin.
Blackberry-in-gold decoration
- Wash the fresh blackberries and dry thoroughly.
- Put the gold powder into a small bowl.
- Roll the fruit in the powder to obtain a golden coating.
- Cut the blackberries in half lengthwise.
- Decorate the muffins with blackberry halves (3 halves per muffin), gently pressing them into the cream.
