Preparation method
Cookie dough
- In a bowl combine the butter with the brown and white sugar, mix with a spatula until combined.
- Add the tahini paste and mix.
- Add the eggs and mix to a uniform consistency.
- In a separate bowl mix the flour with the baking powder, then add to the dough and mix with a spatula.
- Add the chopped white chocolate and mix.
- Add the chopped 55% chocolate and gently fold in.
- Wrap the dough in cling film and chill for at least 30 minutes.
Shaping and baking
- Remove the chilled dough from the fridge and unwrap.
- Divide into equal portions of 80 g each.
- Form balls and place them on a baking tray lined with baking paper.
- Gently flatten.
- Bake at 180°C for 12 minutes, until the edges are golden and the centre remains soft.
Filling with cream
- Place the cream in a piping bag fitted with a filling nozzle.
- Pipe the cream into the warm cookies in 5 places, taking care not to tear the dough.
Sesame in caramel
- In a pan melt the sugar to obtain a liquid, amber, thick caramel mass.
- Add the white and black sesame and mix thoroughly.
- Pour the mass onto parchment, cover with another sheet of parchment and quickly spread into a thin, even layer.
- Once cooled, break into irregular pieces.
Decoration and finishing
- Once the cookies are completely cooled, pipe the thermostable cream on top, creating twisted “curls”.
- Press the sesame pieces into the cream, setting them upright for a decorative effect.
