Thermostable chocolate cream is a specialised solution with a wide range of applications – for bakery and confectionery products filled and then baked. A chocolate cream with an intense flavour and a delicate texture that is convenient to dose. Ideal for filling and baking puff pastry, yeast pastry, cupcakes and muffins. Suitable for baking in closed and open cakes. Suitable for freezing (both before and after baking), it does not lose its consistency and retains its delicious flavour. Dedicated to industrial and craft customers.

  • For filling cakes, pastries, bakery products undergoing the baking process (at 180-220°C).
  • Ideal for products such as: puff pastries, e.g. croissants, yeast crescent rolls, doughnuts, muffins, shortcrust pastries baked with filling.
  • Suitable for baking in closed cakes (croissants, croissants, muffins) – after baking of which it retains a creamy and semi-smooth consistency.
  • In open and semi-open pastries such as yeast cakes, decorated buns – maintains a smooth texture and intense flavour.
  • In frozen products – retains flavour and original smooth texture after baking.
  • They can be used as cover cream for icing and decorating cakes, light desserts and single portions. On the surface of decorated products, they form a well-covering, delicate and elastic layer with a clear gloss.
  • Suitable for cold applications: filling, spreading and decoration of cakes, pastries or waffles.
  • Can be used in a pastry cream with whipped cream or mascarpone.
Directions for use
  • At ambient temperature, thermostable creams have a fine spreadable consistency for convenient dispensing straight from the pack.
  • The consistency of the cream can be modified depending on the application and filling technique: by slight heating to liquidify or slight cooling in the refrigerator (7-8°C) to stiffen.
  • The stuffed product can be baked immediately after filling or frozen until baking. After baking, the cream in the product retains its original properties.
  • When used as a cover cream, vegetable oil (sunflower, rapeseed) can be added, in a dosage of 5-15%, depending on the preferred coating thickness.
  • Preparation of creams based on whipped cream or mascarpone: analogous to spreadable creams.
Storage and shelf life

Temperature 15-20°C, optimally 18°C, RH <75%. Shelf life under recommended conditions, in closed packaging: 12 months.
