Preparation method
Ice Cream
- Combine the dry ingredients: sugar, dextrose, milk powder, cocoa powder and salt.
- Heat the cream and add the chocolate, allowing it to melt.
- Combine the milk, cream and egg yolks and heat to 40°C.
- Then add the cream and chocolate mixture and mix.
- Add the previously combined dry ingredients and heat the mixture to 82–84°C, stirring continuously.
- Leave the prepared base to mature for 8–12 hours.
- After this time, freeze the mixture in an ice cream machine.
