Preparation method
Bottom
-
Whip the eggs with sugar.

Boil the milk with butter and honey, pour over the chocolate to prepare a ganache.

Add the sifted dry ingredients.

Transfer the batter to the baking tin.

Bake at 170°C for 20–25 minutes, cool.
Cheesecake layer
-
Soak the gelatin in water.
-
Bring cream (1) to the boil, pour over the chocolate and gelatin, blend.

Add mascarpone, creamcheese and cinnamon.
-
Whip cream (2) to ¾ of its volume, gently fold into the cheesecake mass.
Assembly
-
Spread the bottom layer with plum confiture.
-
Spread the cheesecake mass on top.
-
Cover with another spiced sponge layer.
-
Chill.
Decoration
-
Arrange the cookies on top.

Dust with icing sugar.
Master’s tip
Add a few drops of rum to the plum confiture – it will enhance the aroma and give a deeper, festive flavour.
