Preparation method

Chocolate Crunch
  1. Melt the cocoa butter, oil and chocolate in the microwave.
  2. Add the Terravita Hazelnut Multi Cream and mix well.
  3. Add the feuilletine flakes.
  4. Mix until evenly combined.
60% Chocolate Mousse
  1. Place the milk, cream, invert sugar and egg yolk in a saucepan and mix well.
  2. Soak the gelatine in the cold water.
  3. Heat the mixture in the saucepan to 82°C.
  4. Pour it over the chocolate and gelatine.
  5. Blend until smooth.
  6. Whip the cream to medium peaks and fold it into the ganache.
Milk Chocolate Mousse
  1. Soak the gelatine in the cold water.
  2. Measure the cream and milk into a saucepan and bring to the boil.
  3. Pour over the chocolate and gelatine.
  4. Blend until smooth.
  5. Whip the cream to medium peaks and fold it into the ganache.
White Chocolate Mousse
  1. Soak the gelatine in the cold water.
  2. Pour the cream and milk into a saucepan and bring to the boil.
  3. Pour the mixture over the chocolate and gelatine.
  4. Blend until smooth.
  5. Whip the cream to medium peaks and fold it into the ganache.
Chocolate Coating
  1. Melt the Terravita Amber Multi Intense Coating together with the oil.

Assembly

  • Spread the chocolate crunch over the bottom of the mould and chill.
  • Pour 13 g of the 60% chocolate mousse into the mould for each portion.
  • Chill.
  • Add 19 g of the milk chocolate mousse per portion.
  • Chill.
  • Add 18 g of the white chocolate mousse per portion.
  • Freeze.
  • Remove from the mould and cover the top and sides with the Terravita Amber Multi Intense Coating.
  • Decorate with a white chocolate disc.
