Terravita ice cream coatings both for industrial and artisanal use:
Ice coatings in solidified form: store in a dry, ventilated room, free from foreign odours at 2-16°C, RH < 75%, in sealed packaging for 12 months.
Ice coatings in liquid form (tank): store stirred in water-jacketed tanks at 40-45°C. Shelf life of liquid coating at 40°C – 3 to 6 weeks from production date, depending on the type of coating.
The ice cream coatings presented in the Terravita range are based on a unique fat phase composition based on coconut oil. These toppings form fast-setting coatings, characterised by adequate elasticity and adaptation to the ice cream body. Carefully developed formulas and a unique production process make it possible to obtain different ranges of fluidity and thickness of ice cream toppings, depending on the individual needs of our customers.
Characteristics
Terravita coatings are available in three categories. The finest of these are toppings with chocolate (Deczek, Melka II, Milk Polar). Two others are classic chocolate (Polar) and milk (White Polar) flavoured toppings and a category of flavoured toppings with notes of peanut (Polnuts) and strawberry (Poltrusk). A unique proposition is the base for fruit toppings, which allows an individual combination of flavours and colours to be composed, depending on the customer’s preferences and the sensory qualities of the final product.
The liquid coating delaminates during storage as the fat phase migrates to the surface and the solid particles sediment to the bottom of the container. This is an occurrence characteristic of liquid, high-fat suspension-like products. Thorough mixing allows for a homogeneous consistency. Continuous stirring of the coatings during storage is recommended to prevent delamination.
Fat migration to the surface also occurs with coatings stored in solidified form. It is therefore recommended to dissolve the entire contents of the original packaging in order to preserve its properties.
